So if someone is shown to be able to decipher, analyze and predict the fighting style of the most experienced fighters on earth such as Sasaki Kojirou, Yujiro Hanma and Zoro , how would this apply to predicting AI's fighting style if AI even has one in the first place?
 
Depends on methods of observation and analysis.
You can determines how an entity moves their joints and appendages, how they apply force and stuff, or even on objects such as traffic patterns during chases. Then they can predict anything, sentient or otherwise without any limitation. Basically mathematical/vector based analysis.

If you rely on reading intent and emotions, then you might have a hard time predicting non-living objects.

But usually skilled characters in fiction have multiple type of observation/analysis/predictions... so they can always have atleast partial predictions being done in their mind.

For example Garou, some One Piece characters, Sparda bois etc can do multiple types.

Huh I don't no what that show is, but it's got good Animation and fight choreography

That aside, yeah... I think this is very manageable for to predict for characters you and I mentioned.
