What is a cookie and why do I need to accept them?

Think of cookies as trackers that will view and record information of your session on websites. When you accept them, your session on that particular website is then recorded.

About why you need to accept them, I dunno

The reason websites put the accept and settings thing is because it's a legal requirement in accordance with certain bills, such as the GDPR.

The accept and don't accept thing don't make much of a difference, unfortunately. Websites can still track you. It's meant to make a difference, but it doesn't because... Well, your data is important and valuable to marketers. They use cookies to easily target you with ads and stuff.

I recommend turning off cookie trackers from your browser and get an extra extension or software that completely blocks them. Otherwise, websites you go to can freely collect data on everything you do. They can also steal personal information - depending on the site.
