What puts Toriko characters at Large Star level?

Oh, that makes sense. Do you know where they might be in the large star category? High, mid, low?

At the end of the series, Toriko was prepared to fight a planet-swallowing snake 80 million kilometres long and he didn't even seem to be worried about it.

Not sure what you're talking about.
Toriko and co. all have tabs for each Arc.
The Eight Kings, Ichiryuu, Midora, and Jirou are all 4-C for being at the top of the food chain at the start of the story. The Kings temporarily held off NEO while Ichiryuu, Midora, and Jirou were the strongest things on the planet sans Acacia himself.

What characters are you referring to? You're being extremely general and I already gave you an explanation for why the most important characters are rated as they are.
In addition, the statement that "almost all characters are Star Level with one tab" isn't exactly consistent with what is o the profiles.
If you're referring to what I think you're referring to, then no, because the Eight Kings and NEO only appeared in the final stages of the series, and Ichiryuu, Midora, and Jirou did not train during this time.
