It's a power that I just happen to like, but I normally see it on a lower scale, with the highest scale I've ever seen being Kurama's country level. Can anyone provide examples of this being planet-universe level? Other than powerscaling?

The highest I know is Yggdrasil from Digimon.

It's a Universal being with Reality Warping, Space-Time Manipulation, Soul Manipulation, Death Manipulation, and other hax, but it still reaches for plants first.

Though Gardenia is kind of an uncommon example, as despite looking and being like a plant, it usually destroys the planet more or less by absorbing its energies.

A more interesting one would be Lambda in Tales of Graces. Granted, he doesn't outright fight using plants, but he has the power. The penultimate dungeon is a cocoon made entirely of plants (and monsters) he created with his powers to create new life.

The cocoon is the size of a big Island and considerably huge, height wise:

and then there's a certain character who says later on that if she could take Lambda back to Fodra (the red planet in the cutscene) she could restore all life there with his powers.
