the fact that knuckles was upgraded to 2-C in his hyper mode so I'm just using his super form

Though nothing really changes. If anything Vegeta likely stomps here since SSBE Vegeta = 20 * SSB Vegeta = Post UIO2 SSB Goku > UIO1 Goku > Infinite Zamasu = Baseline Low 2-C

i mean knuckles' hax could still work on him especially with his dura negated uppercut (ik it doesn't one shot it just damages) and that match was invalid to add too

He doesn't really starts with hax though. Maybe a fairer fight would just be puttting him against SSB Vegeta? He's still Low 2-C

Ok. Vegeta is bloodlusted here so he attacks Knuckles with a barrage of ki blasts that Knuxkles is able to tank fairly easily due to his stonewall durability, and the two will fight for a while.

However, Vegeta being bloodlusted would mean that he'll want to end the fight as quickly as possible so I see Vegeta defeating Knuckles before he would opt to use his haxes

I'll go with Vegeta for now
