Well, for starters, Psylocke's mindhax explicitly rivals that of Charles Xavier. This is a guy who can transmit the thoughts and feelings of an entire planet's population into someone's mind, and he once channeled the minds of another world's population in order to mindhax a literal planet. And IIRC, Psylocke herself has broken through the defenses of people who Xavier has trouble dealing with.
Kitana has like zero mindhax resistance.
Also, that's just mind manip. Psylocke has a good number of other abilities that Kitana can't handle, and that's assuming she doesn't just mindscrew the Princess right out of the gate.

For starts Psylocke does not rivial Xavier. If anything Emma Frost would the closest telepath to be on Xavier level with just skill alone. Just because Psylocke is an omega level telepath doesn't mean she is on Xavier level.
Who did Xavier have problems with that Psylocke did not. Are you talking about Shadow King because he equals Xavier in power. Also she kept him in her mind by giving up a power. She is not even on Racheal Grey level, who is weaker than Emma in skills.
Also on topic Psylocke tp too much even for the entire mortal kombat verse. Her tk is powerful than Rahael Grey, who possibly solo the mortal kombat verse with tk alone. Pyslocke just does not have unlimited energy. Or a simple tk bubble and Kitanna is gone.
This battle should be Kitanna vs Pyslocke using psi weapons only. (tp/tk) she should only be able to use tk for her strength, speed and weapons.
