Well Joe's only notable feat with a knife would be this.
And I couldn't find a good clip of Hannibal using a knife because he mostly prefers H2H but here is how he defends against one.

Not quite, as it's an entirely different usage that you gotta do with hands, arms, etc
Just think of how you'd try taking a pistol away and using the same technique to take a knife away...yeah.

There is an at least 1.5 times advantage in the favor of Hannibal. As he likely scales to Will.

Well...two guys have knives and are facing each other.
One of them "knows" how to use it...the other has higher LS and properly know how to defend against one.
Hannibal seems to be taking it pretty smoothly
