Ippo has a 2.5x AP advantage
And thats... really all he has going for him.
Little Mac is a dodge god to other boxers, it's no joke to say that everyone besides Mr. Sandman cheats in some way in Punch out Wii, if Ippo is not playing dirty, he'll be a cakewalk... even more so considering Little Mac is pretty extensively peak human in boxing skill.

Not like Little Mac hasn't been at the speed disadvantage before, some of the attacks in Punch-Out are hellishly fast

Considering the broad span of opponents Mac fights and them literally cheating and he still wins, I don't think Ippo is as skilled as Mac. Also Mac is smarter.

Can Mac survive having his heart stopped and brain connection severed while also being feinted with illusions that trick opponents beyond the 5 senses and being overwhelmed with perception manipulation that makes the opponent feel as though their face was ripped off?
Ippo mixes these in his fighting style seamlessly while also reducing the damage done his opponents to 50%, 30%, and even 0% of the energy put behind it. Because Ippo is already significantly faster than Mac, I really doubt that Ippo would take much damage. Ippo is literally always fighting opponents with faster attack speed to him but despite that he's able to react to them and easily predict what they do, so Mac being 3x slower would literally make his attacks look like they're moving in slow motion.
Ippo also has durability negation that allows the impact of his fist to bypass the outer layer of the body to specifically target organs and ribs to shatter them.
I doubt it would get to this due to Ippo's analytical prediction which surpasses even the "highest level of chess gameplay" and his speed advantage, but when damaged enough, Ippo gets amped to the level to where he can oneshot and blitz people who were superior to him beforehand.

I do think the AP part of Ippo's profile is also a bit crummy, granted the feat used for the justification basically had the desk split in half rather than utterly destroyed. But as it stands, this is basically a stomp in Ippo's favor.
Update: So I decided to look at the other feat Ippo supposedly scales from... And I calc'd it. Still needs a look-over and a CRT, tho.
