Lol, Jack can just grab the kidneys without even needing to cut it up. Anyway, they both scale to 375J for being able to break bones. I think Jack takes this. The Subject has Immortality Type 2 and resistance to pain but as I mentioned above, having your organs completely exposed against a guy who has the surgical knowledge and the tools (Claws and teeth) to destroy them is kinda a death sentence. Jack just overpowers the Subject with his superior LS and rip out its lungs or heart (Which we know is enough to kill it and is an in character move for Jack).
