Depends if you are talking about Anime or Manga
In the manga Goku scales to 3 universes
In the anime Goku scales to 3 universes until his UI transformation, where he do a feat that place him at 6 Universes

It doesn't matter if it's manga or anime. And I wonder how there are 6 universes in the anime and 3 universes in the manga?

Because only anime Goku did this:
"Low Multiverse level (6 universes. I may ask a stupid question right now, I apologize for that. But if this success is not in the manga but is in the anime, what is the level of canonization?

Do you mean how "canon" the feat is?
If so, we treat the anime and the manga as different continuities, so everything from the manga is canon for the manga and everything from the anime is canon to the anime
