2. Actually we do know what he does with 1-A shit. As the page mentions, the Neh-Thalggu is different from most aberrations in that it is still partially in the Far Realm as it hunts, owing to its incorporeality. So when it sucks up a brain into its body, that brain is actually being sucked, soul and all, into the Far Realm. Something of a horrifying thought.
3. The ghoul received a titanic revision by Tllmbrg. The skeleton was a basic page churned out with the intention to possibly update it, never happened. There are variants at those tiers, probably. I don't remember every CR of every official type of skeleton.
